Apple Cookie Cobbler Recipe
Looking for a delicious, satisfying g dessert to serve at your Super Bowl party (or for any sports get-together for that matter)? This luscious Apple Cookie Cobbler is perfect. It isn’t light or frou-frou, so it is a great end to all of the heavy food served, but is one of those desserts hungry sports fans (and everyone else) can’t resist. It’s made in a cast iron skillet, and is easy to put together.

This yummy cobbler can be served warm or at room temperature. It’s great with sweetened whipped cream or a scoop of good vanilla ice cream. You’ll find yourself making this whenever apples are available. You can use your favorite cooking apples – I use half Granny Smith and half pink, but golden delicious, Jonathan, honey crisp, or other baking apples work well, too.

Filling:
1/4 cup butter
8 to 10 cups apples, peeled, cored, and thinly sliced
3/4 cup sugar
2 teaspoons cinnamon
2 tablespoons candied ginger, finely minced


Cookie Crust:
1 cup butter
1 cup sugar
1/4 cup brown sugar
1 large egg
2 teaspoons vanilla
1/2 teaspoon cinnamon
1/2 teaspoon freshly grated nutmeg

2 1/2 cups flour
1/2 teaspoon salt
1 tablespoon cornstarch
1 teaspoon baking soda
1/2 teaspoon baking powder

Sweetened Whipped Cream or Vanilla Ice Cream

  1. Preheat oven to 350°.
  2. Filling: Melt the 1/4 cup butter in a 12" cast iron skillet. Add the apples, tossing to coat with butter. Stir over medium heat for 5 minutes.
  3. Stir in the sugar, ginger, and 2 teaspoons cinnamon. Stir over medium heat until the apples are just tender and caramelized, but still have a fair amount of juice. Remove from the heat.
  4. Cookie Crust: Cream the butter, sugar and brown sugar until very light. Add the egg, vanilla, 1/2 teaspoon cinnamon, and nutmeg. Beat until fluffy.
  5. Place a fine strainer over the mixture and measure in the flour, salt, cornstarch, baking soda, and baking powder; shake through. Mix on low speed until well-mixed, scraping the bowl a few times. Place pieces of the dough evenly over the filling.
